Pasta with Salsiccia Ragu – Italian sausage ragu recipe
You need the following ingredients for your ragu di salsiccia recipe:
- 500 g Salsiccia
- Hot red pepper
- One onion
- One clove of garlic
- Parsley
- 700 ml Passata (Tomato puree)
- Salt and Pepper
- Two twigs of rosemary
- 2 bay leaves
- 2 bunches of cherry tomatoes
- 2 handful of peas
- 1 lemon
- 150 ml red wine
Preparation of the Italian sausage ragu recipe
- First, you cut the sausage open and press the meat out of the skin. Then you cut the onion and the cloves of garlic in small pieces or slices.
- Heat 3 tablespoons of good Italian olive oil in a pan. Add the onion and the garlic as well as the salsiccia meat.
- Season the meat with hot red pepper, salt and black pepper and fry it until it is lightly brown.
- Add two bay leaves and cut the cherry tomatoes in half and add them, too. Put two rosemary twigs on top.
- Pour 150 ml red wine over it and let it simmer until the wine is boiled down to a thick sauce.
- Add 700 ml Passata (tomato puree) and let it simmer at low heat for about an hour. Don’t forget to stir it regularly. In case your sauce gets too thick, add some pasta water for fresh fluid.
- After about half an hour you can add two handful of peas to cook with the sauce.
- Grate some lemon peel over it.
- In the meantime cook your pasta al dente and add it also to the sauce.
- Mix everything well and serve the pasta. If you wish, you can add some thinly sliced parsley leaves on top and grate some parmesan cheese over it.
