The third version is the sausage seasoned with chili. I don’t use that often, because I don’t like to eat hot meals. 

Salsiccia also comes in different forms. You can find it in the form of a horseshoe. But in some regions like in Sardinia, they make it in the form of a spiral, or they are shorter and thicker.

The regional variations have different names, too. In Bari they call it Cervellata. You can find it under the name of Salento. In Trapani they call it Pasqualora.

It also depends, if you can get the original salsiccia in your supermarket. In Germany, where I live, we could only buy it online for a long time. However, now we can get it at some supermarkets, too. If you can’t find it, where you live, you can check Amazon. They usually sell original Italian salsiccia.

Making your own sausage really makes a difference. This may be more work, but you can decide, what goes into the sausage. It also is so much more fulfilling to make it yourself. We learned, how to do it from a sausage sommelier in Germany and sometimes make a whole bunch of sausages. We freeze them for later use. This is perfect for summer. You just take them out of the freezer and put them on the grill. Together with a fresh salad that’s a perfect and quick summer meal.

Pasta with Salsiccia Ragu – Italian sausage ragu recipe

You need the following ingredients for your ragu di salsiccia recipe: 

  • 500 g Salsiccia
  • Hot red pepper
  • One onion
  • One clove of garlic
  • Parsley
  • 700 ml Passata (Tomato puree)
  • Salt and Pepper
  • Two twigs of rosemary
  • 2 bay leaves
  • 2 bunches of cherry tomatoes
  • 2 handful of peas
  • 1 lemon
  • 150 ml red wine

Preparation of the Italian sausage ragu recipe

  1. First, you cut the sausage open and press the meat out of the skin. Then you cut the onion and the cloves of garlic in small pieces or slices. 
  2. Heat 3 tablespoons of good Italian olive oil in a pan. Add the onion and the garlic as well as  the salsiccia meat. 
  3. Season the meat with hot red pepper, salt and black pepper and fry it until it is lightly brown.
  4. Add two bay leaves and cut the cherry tomatoes in half and add them, too. Put two rosemary twigs on top. 
  5. Pour 150 ml red wine over it and let it simmer until the wine is boiled down to a thick sauce. 
  6. Add 700 ml Passata (tomato puree) and let it simmer at low heat for about an hour. Don’t forget to stir it regularly. In case your sauce gets too thick, add some pasta water for fresh fluid. 
  7. After about half an hour you can add two handful of peas to cook with the sauce. 
  8. Grate some lemon peel over it. 
  9. In the meantime cook your pasta al dente and add it also to the sauce. 
  10. Mix everything well and serve the pasta. If you wish, you can add some thinly sliced parsley leaves on top and grate some parmesan cheese over it.
