You can use spaghetti with it. But actually, any kind of pasta is good. Just make sure you don’t overcook it. It will lose its texture otherwise and won’t taste as good. If you want to make an Italian sausage ragu recipe, you can serve it with different pasta types, such as Spaghetti, or Gramigna (which is typical in the Emilia Romagna region).
Salsiccia – the Italian bratwurst
The next highlight for Italian sausage and marinara sauce recipes, Italian sausage tomato pasta recipe, creamy Italian sausage pasta recipe, authentic Italian sausage pasta recipes! One one the base ingredients for a ragu di salsiccia, for your Italian sausage ragu recipe you’ll need salsiccia (sausage). This is an Italian bratwurst. A thick and spicy sausage, that is often put on the grill. It tastes good if you grill it. In our recipe, however, we use it differently.
Also, you should decide, what kind of salsiccia you use with this dish. There are three different kinds available in stores. You can get the classic salsiccia, a fennel salsiccia – my favorite -, or a peperoncino salsiccia, which is quite hot.
The classic salsiccia is a sausage made of pork and seasoned with salt and pepper. It’s good, but I prefer the fennel salsiccia for this dish. It’s the salsiccia version you find in southern Italy. There they use wild fennel and chili to season it. A delicious version is the Pasqualora from Trapani, a sausage seasoned with salt, black pepper, chili, wild fennel, and white wine. The third version is the sausage seasoned with chili. I don’t use that often, because I don’t like to eat hot meals.
Salsiccia also comes in different forms. You can find it in the form of a horseshoe. But in some regions like in Sardinia, they make it in the form of a spiral, or they are shorter and thicker.
The regional variations have different names, too. In Bari they call it Cervellata. You can find it under the name of Salento. In Trapani they call it Pasqualora.
Where to get original Salsiccia for authentic Italian sausage pasta recipes?
It also depends, if you can get the original salsiccia in your supermarket. In Germany, where I live, we could only buy it online for a long time. However, now we can get it at some supermarkets, too. If you can’t find it, where you live, you can check Amazon. They usually sell original Italian salsiccia.
If you’re looking for recipes with Italian sausage and egg noodles, another option is to make Salsiccia yourself. We learned, how to do this from a small country butcher in Germany. Making your own sausage really makes a difference. This may be more work, but you can decide, what goes into the sausage. It also is so much more fulfilling to make it yourself. We learned, how to do it from a sausage sommelier in Germany and sometimes make a whole bunch of sausages. We freeze them for later use. This is perfect for summer. You just take them out of the freezer and put them on the grill. Together with a fresh salad that’s a perfect and quick summer meal.
Here, however, we introduce you to an easy Italian sausage ragu recipe. Make sure you check other recipes we have on lifeinitaly.com but also different interesting pasta like orzo mac and cheese.
